Hey,
Depend on which platform you want to use, is it mobile phone or
laptop/desktop?
Before i proceed, Im sorry to tell you that this is not for people who
doesnt know much in tech stuff but its not hard as well to learn.
I will talk about mobiles (assuming that what you want to know about)
its sorta harder to have meaningful confidentiality because there is no
good way of anonymity inside a mobile phone specially Iphones.
for Android, Its good to have good project who take care of the android
security and for that there are good ones, I prefer to use GrapheneOS:

IM Applications:
Briar which is based on Tor anonymization protocol P2P decentralized:
(can be installed on any android variant as well)

For clearnet apps not anonymized by default and use P2P no centralized

Can be anonymized over Tor by using Orbot app: (cant use VOIP if used
