  I try to get people in on baby steps, and talk about their specific
concerns and what will give them the largest increase in security.  It
doesn't go unnoticed that most people are actually pretty freaked out
by the reality of their threat model.  With most people, you're not
going to get very far by expecting an extreme and drastic change.  A
better approach is to give them options, and promote the idea that
their communications can move to a more-secure venue.
