It depends what security you want. I've been experimenting with jitsi,
http://jitsi.org, as it has OTR and ZRTP built in and automatically
enabled. text, voice, and video chats are automatically encrypted with
zero input from the user. This protects the transport of info between people.
As for jitsi itself, I don't believe the software is resistant to attack
and it could probably use a good security audit.
And it does work over Tor if you want transport anonymity.
Other means to accomplish your goals are to use piratepads, typewith.me,
or gobby (collab doc editing, chat, and filesharing).
