Most of the time it it output in gzipped text files that are pretty similar to something you would get from squid. Bluecoat offers a program that interprets files into graphs and there are some open source tools that will do the same. There are some logs from Syria that were extracted by Telecomix and other groups out of the server that was being used to collect the files and input them into Bluecoat Reporter.
