For live or very active content sprints, etherpad and/or google docs
are both great. I think git is less useful for comments in my
experience (google docs or shared document files seems better?) ...
but more useful in long-term collaborative work -- though onboarding
is pretty painful. It allows for constant creation of product while
staying open for editing (as opposed to a workflow of taking something
out of etherpad into a different format/file/whatnot.

insight here based on his content as code work.

mattermost/slack options (there are more, possibly better options!):

Specifically, Rocket.Chat has a lot of the functionality of Slack (and
has slack bridge plugins!), but is OSS, self-hostable, and has built
in OTR chatting and SRTP (jisti style) multi-party voice calls, with
mobile apps to boot.
Keybase just launched a pgp-based slack clone with everything
end-to-end encrypted, but at the cost of being pretty visible with
your contacts (it's like the web of trust on steroids)
